Ingredients
  

  • 1 cup fresh or frozen corn thawed if frozen
  • 1 small carrot grated
  • 1 egg
  • 1/4 cup whole wheat flour
  • 1/4 tsp baking powder
  • 1 tbsp olive oil for cooking
  • Pinch of salt and pepper optional, skip for babies under 1

Instructions
 

  • Combine the base – In a mixing bowl, stir together corn, grated carrot, egg, flour, baking powder, salt, and pepper. The batter will be thick enough to hold together — just right for shaping fritters.
  • Warm the pan – Heat olive oil in a skillet over medium heat. You’ll know it’s ready when a small drop of batter sizzles gently.
  • Shape and cook – Scoop small spoonfuls of batter into the skillet, then gently flatten with a spatula. Smaller fritters are easier for toddlers to pick up.
  • Flip for golden crispness – Cook each side for 2–3 minutes until golden brown. They should smell toasty and look lightly crisp.
  • Cool before serving – Transfer fritters to a paper towel to remove extra oil. Let them cool completely before offering them to your toddler. For younger babies, mash or cut into tiny pieces.

Storage tips: Keep fritters in the fridge for up to 3 days in an airtight container. Freeze in a single layer, then store in a freezer-safe bag for up to 1 month. Reheat in the oven or skillet until warm.
Age modifications: For babies under 1, skip the salt and cut into small, soft pieces. Mash slightly for easier chewing.
