Ingredients
  

  • 1/2 cup honey
  • 1/2 cup almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon optional
  • 2 cups rolled oats
  • 1/2 cup dried cranberries
  • 1/4 cup mini chocolate chips optional

Instructions
 

  • In a medium saucepan, gently heat the honey and almond butter over low heat until melted and combined. This makes mixing easier and the bars stick together well.
  • Remove the saucepan from heat and stir in vanilla extract and cinnamon. These add a lovely warm flavor your toddler will enjoy.
  • In a large bowl, combine the oats, dried cranberries, and mini chocolate chips. Stir them together so the mix-ins are evenly distributed.
  • Pour the warm honey and almond butter mixture over the oat mixture and stir until well combined. The mixture should be sticky and hold together nicely.
  • Press the mixture firmly into a lined 8x8 inch baking dish. Use the back of a spoon or clean hands to flatten it evenly — this helps the bars hold their shape.
  • Refrigerate for at least 2 hours before cutting into bars. Cooling makes the bars firm and perfect for little hands to hold.

Notes

  • Store bars in an airtight container in the fridge for up to one week or freeze for up to one month.
  • For younger toddlers or babies, cut bars into small pieces or mash to a softer texture.
  • Nut allergies? Substitute almond butter with sunflower seed butter or tahini.
  • To make vegan, use maple syrup instead of honey.
  • Boost nutrition by stirring in a tablespoon of ground flaxseed or chia seeds.
