Ingredients
  

  • 1 cup green beans finely chopped
  • 1/4 cup wheat flour
  • 1 egg
  • 1/4 cup grated cheese
  • 1/4 tsp salt optional
  • 1/4 tsp pepper optional

Instructions
 

  • Preheat your oven to 375°F (190°C). This will make sure it’s ready when your batter is mixed.
  • In a mixing bowl, combine the chopped green beans, flour, egg, grated cheese, salt, and pepper. Stir until you get a thick, sticky batter — this is perfect!
  • Scoop spoonful of the mixture onto a greased baking sheet. Gently flatten each one a bit so they cook evenly and get crispy edges toddlers love.
  • Bake for 15–20 minutes, or until the fritters are golden brown and firm. Your kitchen will smell delicious!
  • Let the fritters cool completely before serving. For younger babies, mash well or cut into tiny pieces for safe eating.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days. Freeze for up to 1 month after freezing them on a tray first.
  • Reheat in the oven or toaster oven to keep them crispy. Microwave if short on time (texture will be softer).
  • For younger babies, blend green beans more finely and skip salt and pepper. Make fritters smaller and softer.
  • Egg-free? Use a flax or chia egg (1 tbsp ground flax/chia + 3 tbsp water).
  • Dairy-free? Omit cheese or swap for plant-based cheese.
  • Gluten-free? Use oat flour or gluten-free flour blend instead of whole wheat flour.
  • Boost nutrition by adding a teaspoon of ground flaxseed or chia seeds to the batter.
  • Let toddlers help with mixing or shaping to make snack time fun!
