Equipment

  • Steamer or saucepan
  • Mixing bowl
  • Fork or potato masher
  • Baking Sheet
  • Parchment paper or silicone baking mat

Ingredients

  • 1/2 head cauliflower chopped into small florets
  • 1/2 cup shredded cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 tsp garlic powder

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
  • Steam the cauliflower until fork-tender—this usually takes about 5–7 minutes.
  • Mash the steamed cauliflower with a fork or masher until soft but still a little chunky for texture.
  • In a large bowl, mix the mashed cauliflower, shredded cheese, breadcrumbs, egg, and garlic powder. The mixture should hold together when pressed.
  • Scoop and shape the mixture into small bites or nuggets. Place them evenly spaced on your baking sheet.
  • Bake for 15–20 minutes, or until the bites are golden and lightly crisp on the edges.
  • Let cool slightly before serving, especially for babies or younger toddlers. Enjoy these cheesy veggie-packed bites warm, or pack them for later!

Notes

Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. Freeze extra bites in a single layer, then transfer to a bag or container for up to 2 months. Reheat in the oven or toaster for best texture, or microwave briefly for a soft finish.
Texture by Age: For younger babies (6–9 months), mash well or blend the mixture before baking for a smoother texture. For toddlers, you can leave them a bit chunkier and serve whole or halved.
Allergy-Friendly Options: Make it dairy-free by using plant-based cheese and a touch of nutritional yeast. For egg-free bites, sub the egg with 2 tablespoons of plain mashed potato or unsweetened yogurt. Use gluten-free breadcrumbs if needed.
Nutrition Boosters: Add a spoonful of ground flaxseed or chia seeds to the mixture before baking. You can also mix in finely grated carrots or zucchini (just squeeze out extra moisture).
Parent Tip: Give them a fun name like “Cheesy Cloud Puffs” or “Veggie Nuggets” to spark toddler interest—especially helpful with picky eaters!
