Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
In a mixing bowl, combine grated carrots, cheese, breadcrumbs, and the egg. Stir everything together until well mixed. Little hands can help with this step!
Form the mixture into small balls, about one tablespoon each. It might be slightly sticky—that’s okay! You can wet your hands a bit to make shaping easier.
Place the bites on your baking sheet, spacing them out just a bit.
