Equipment

  • Saucepan or soup pot
  • Blender or hand blender
  • Wooden spoon

Ingredients

  • 1 cup broccoli florets chopped
  • 1 large potato peeled and diced
  • 1 small onion diced
  • 2 cups vegetable broth
  • 1/2 cup milk
  • 1 tbsp butter

Instructions

  • Melt the butter in a saucepan over medium heat. Add the onion and sauté until it becomes soft and fragrant.
  • Add the potato, broccoli, and vegetable broth. Stir, then bring everything to a gentle boil. Lower the heat and let it simmer until the vegetables are tender.
  • Blend the soup until smooth. For babies, blend until extra creamy. For older toddlers, you can leave it slightly chunky for more texture.
  • Stir in the milk and let it warm through. This makes the soup creamy and comforting.
  • Serve warm. Allow it to cool a little before serving to toddlers. Add fun toppings like a sprinkle of cheese or soft bread sticks if you’d like.

Notes

Storage: Keep in an airtight container in the fridge for up to 3 days or freeze in small toddler portions for up to 2 months. Reheat gently on the stove or in the microwave, adding a splash of milk or broth if it thickens.
Age modifications: For babies under 1, blend very smooth and skip added salt. For toddlers, you can serve slightly chunky with toppings.
Allergy-friendly substitutions: Use dairy-free butter and oat or almond milk for a dairy-free version.
Nutrition boost: Stir in a spoonful of ground flaxseed, chia seeds, or even some lentils for extra protein and fiber.
Parent tip: Give the soup a fun name like “green superhero soup” to make it more exciting for picky eaters.
