Ingredients
  

  • 1 cup cooked rice
  • 1/2 cup broccoli florets finely chopped
  • 1/4 cup shredded cheddar cheese
  • 1 egg
  • 1/4 cup breadcrumbs

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Mix everything together in a large bowl: rice, chopped broccoli, cheddar cheese, egg, and breadcrumbs. The mixture should be easy to scoop and shape.
  • Form into small balls (about toddler-hand size) and place them gently on the baking sheet.
  • Bake until golden for 15–20 minutes, or until the rice balls are set and lightly crisp on the outside.
  • Cool before serving so they’re safe for little mouths. For babies, mash gently or cut into smaller pieces.

Notes

Fridge storage: Keep leftover Broccoli and Cheddar Rice Balls in an airtight container for up to 3 days.
Freezer storage: Place them on a tray to freeze individually, then transfer to a freezer bag for up to 2 months.
Reheating: Warm in the oven or air fryer until heated through, and always let cool slightly before serving to toddlers.
